Maitre-d Fred Sirieix returns to take over a luxury hotel, where his team of matchmakers welcome more singletons. The first edition features former military paramedic Gareth from south Wales, who feels as though everybody already knows each other, and has found dating very tricky. Into the restaurant walks Carys, whom he was previously matched with on a dating app. As the evening progresses, it looks possible that fate has brought together two lonely hearts who would otherwise never have got past the swiping stage.

Twins Bethany and Shannon arrive at the Italian hotel, both on the lookout for love. Will either of their dates, Phil and Aaron, win over their respective sister? Meanwhile, 57-year-old Annie is paired with 47-year-old Rachel, who is looking to inject a bit of hedonism into her life on a date that proves opposites do attract.

Maitre d' Fred welcomes more singletons to the luxury Italian hotel, including private chef Georgia, who is impressed with her date Nick's knowledge of the local produce. History teacher Debbie hopes to find her knight in shining armour, while Sophie, who at 18 is the youngest guest to check in, reveals her love of animals, something she claims that men don't understand. Then along comes Billy, with his collection of pet tarantulas.

Meanwhile, retired teacher Edward is keen to find someone who enjoys dancing as much as he does, while silk manufacturer Duncan is paired with candle-maker Richard - will the flame of passion burn brightly between them?

Guests include an academic and classical singer raised in the Mormon Church who wants someone as artistic and intelligent as himself, a teaching assistant who wants a man full of confidence who can make her laugh, and an Italian recruitment officer looking for someone who brings out her vulnerable side.

The final group of singletons check in searching for their perfect partners. They include an Oxford maths undergraduate looking for a good listener - and preferably someone tall - and a hair salon owner who wants someone with whom he can start a family. Also arriving is Elissa, a master of ceremonies for dinners, birthdays and, indeed, weddings. Will her own big day be just around the corner after meeting am-dram enthusiast Rob?
