I thought it was about time that I reported this just in case it is important? I noticed over a week ago that at lease 1/2 of the shows I look at are missing the day(s) that they air. I have been adding the missing day(s) in but this step seems like it might be a waste of my time? Since it does not effect Episodes in any way it just may be a moot point however I thought you might want to be aware of it?
I assume you mean the "scheduled" property, e.g. "Wednesdays at 20:00"?
In that case, yeah, it's purely cosmetical and it doesn't affect anything on the episode level - the only important thing there is the actual airdate stored for an episode. So it's nice information to have, but by no means crucial.

with almost all running shows the day they are airing should be there, for older shows they can be missing for two reasons, we simply haven't got the time to add them yet or we do not know them for sure.
But even if a now running show does not have the day added it airs, it will still show up on the schedule :)
If you see some missing and feel to add it, you are more than welcome :)
