Sometimes I don't have time for a whole episode of a show but theres no inbetween for "watched" and "unwatched" so maybe marking episodes as "partially watched" could be a possibility?

Whilst not exactly the same, I'd suggest putting it as Acquired so that you can remember it.
"Partially watched" would make it impossible to count time spent on a partially watched episode.
Although for the sake of the argument, it could be a variation of "Skipped" like "Glanced" or something, without counting time, I guess.
If you do not want to add time to your statistics by partially watching it, just use the option skipped. It doesn't make sense to have an option, which does exactly the same as 'skipped' does. If it would implemented, it should require you to fill in a certain time you've spend watching it for it only to work, however I don't think (Actually I am quite sure) that such a feature will or shall be implemented.
