This would be super helpful with watchlists where mulitple shows have crossovers (ex. Arrowverse). Unfortunately "Watch Aired Most Recently" goes by the most recent airdate and not where I am in the shows (a year behind) so it is not helpful. Sort by next airdate would be nice.
+1 to this. Would be a huge help.
If I'm understanding you correctly, instead of using the show's next episode (which is based on the current date), you want it to be the next unwatched episode on that show.

Exactly.
I wanted the same thing so I had the behaviour to one of my scripts : https://raw.githubusercontent.com/cicelle/tvmaze/master/episodes-count-watchlist.user.js
It change the order for :
- 'Completed the most', 'Completed the least' => order by the amount of unseen episodes instead of percentage
- 'Aired least recently' and 'Aired most recently' => order by the first unseen episode
