Josh Eggleton

Josh Eggleton is chef proprietor of Michelin starred pub The Pony and Trap in Chew Magna, Bristol.

Josh started baking at an early age, inspired by his grandparents. His father was also a big influence as he did most of the cooking at home as well as run a successful business.

Josh's first job was at a local fish and chip shop aged 15, after an apprenticeship he then became head chef at Bristol's The Olive Shed restaurant. In 2003 Josh won the prestigious Gordon Ramsay College Scholar competition.

Turning down jobs from Angela Hartnett, Gordon Ramsay and Marcus Wareing, Josh travelled to the States where he learned from fellow chefs in kitchens at New York's Chanterelle and The French Laundry in California.

At 22, Josh took over the Pony and Trap and won a Michelin star in 2011, which he has retained every year since.

Josh has gone on to set up two more ventures, Salt and Malt, a tearoom and fish café on the waterside at Chew Valley Lake and Yurt Lush, a pop up cafe set in three Mongolian Yurts, in Bristol city centre.
