When i'm in the calendar view, i don't see the 31 of July, I have to change month to August to see it.
For information, my settings are on Paris Hours (GMT +1)
This is not a bug. This is due to the fact that it is organized in weeks. As week 31 is mainly august, I think they've decided to display it in august as it only displays 5 weeks per month (otherwise it would be 6, think that might be a bit overkill for just one day)
Maybe but there is a bug : episodes who will be broadcast sunday don't appear anywhere.

Maybe it's more related to timezone, i don't know

It's not a bug. You just seeing airdates in your local timezone, so GoT for you should be 2:00 on Monday. You could change the settings in your dashboard https://www.tvmaze.com/dashboard/preferences

Hmm, that's awkward. If I turn on the local timezone, it's not displaying in mine as well. I could see the next week episode, but not the one airing this Sunday. And it's not only GoT, but Twin Peaks as well. It's GMT+3.

Now that I thinking about it, i thinks it probably because of the way episodes are fetch on this page, the db request probably don't count timezones.
So we have a glitch and some episodes may never be displayed in calendar. That's a bummer.
