I created the episode list on "Ιστορίες από την Απέναντι Όχθη", which leads me to the next question. There are 5 episodes that we have credits and cast, they just never aired. I tried to register the first of them with a null date but it won't let me enter it. Don't we list such cases here, even as "insignificant"?

We list them as regular episodes with no dates.

When I said you should use official sources I didn't mean you should do an interpretation on what the graphical logo looks like but instead look at how it's written in text coming from the network itself, examples of this being press releases, how they refer to themselves on their web page and so forth.

You also seem to think network names have to be written in a single uniform way, this obviously not the case and every network can write their name any way they want.

As for the MEGA Channel specifically, simply looking at some random articles on their front page and reading the text there where they refer to themselves as MEGA tells me we have the correct casing the way the name is listed now.
