I am currently trying to remove tags from a show I am unfollowing, but the new format won't let me. It will let me change the tags, but it won't let me remove them entirely from a show.

You can remove shows from the tags there.
Okay, thanks, I hadn't known about that. But is there any plan to bring back the old way of removing tags straight from the follow list? Removing it from the tag section is a very clunky method to remove all tags from a show, requiring me to search for the title multiple times to remove multiple tags, and will get very annoying very quickly.

With the recent update, we had to strip some things down. Most of it was replaced/improved, but in this case...
Since we intend on improving the tagging system globally, we decided to temporarily leave it as is.
Apologies for the inconvenience. Just know it's not permanent. :)
You can add/remove multiple tags for a show in one go by clicking the "label" icon at http://www.tvmaze.com/dashboard/follows.
