What is the protocol here?: HBO Max To Drop Remaining Episodes Of HBO's INDUSTRY Early On November 27 | Pressroom (warnermedia.com)
Should the airdates be updated or still use the HBO airdates, since the first episodes premired on HBO first?

If episodes within a season premiere on multiple sources, the source with the most amount of premieres wins. The airdates for all episodes in the season must follow the winning source.
Didn't they currently release the episodes on HBO Max immediately after the linear premiere? So probably there's no need to change the airdates of the first 3 episodes.

I don't live in America (and therefore don't have HBO Max), so I don't know when they were released on HBO Max unfortunately.

Neither do I :)
But according to http://www.thefutoncritic.com/news/2020/10/22/hbo-max-highlights-november-2020-309410/20201022warnermedia01/, the streaming premiere of Industry was on the same day as the linear premiere, so I suppose the other two episodes were released on the same principle.

I would also assume that, would be weird if hbo max (which costs more) gets the premieres later than "normal" hbo.
