Just a quick question about the "Episode Order" space for editing a season of a show- what is the protocol for cartoons similar to SpongeBob SquarePants that have an A/B segment making up an episode- where basically there are two 11-minute episodes filling in a 30-minute slot (commercials included...). What then would be the episode order if let's say there were a total of 10 episodes, meaning there are 20 segments (A/B 10 times = 20 segments). Would the episode order be set to 10 or 20 in that case?

It first depends on how the show fits within the TVmaze policy:

If there is a break between the two parts, two separate episodes should be created. Examples of a break are credits or titles appearing on screen for a second time; or a voice-over introducing the second part.

If the show airs Segment A+B continuously without the break in between then it would be 10 episodes of 30 minutes. If the show airs Segment A, breaks with a title sequence or has credits in between the segments then it would be 20 episodes ordered of 15 minutes.
